Kokotxas are one of the most valued fish dishes in the Basque Country. This dish can be found in many restaurants and pintxo bars, thus representing the culture of Basque sailors to perfection. In it, the culture of transatlantic fishing, salting and high-level cuisine are linked.
The kokotxas are the part of the fish that is found in the chin area, specifically, under the lower jaw, and can be mainly hake, cod, and fresh or salted. The two most emblematic preparations are: in green sauce or pil-pil.

DESCRIPTION
On this trip we are going to discover the sea of Gipuzkoa beyond San Sebastián. We have designed a one-day trip, where we will discover the gastronomy and culture of the sea in Gipuzkoa.
We will visit a part of the Gipuzkoa coast discovering its culture, its history and highlighting shipbuilding and gastronomy.

We prepare a visit to a very special museum that perfectly represents the effort and work culture of Basque sailors. Something very remarkable about this museum is that it houses a working shipyard where replicas of historic Basque ships are built, using traditional shipbuilding techniques.
After a mini boat trip, part of the public transport (optional), we take you to a restaurant to eat fish, for this day we have chosen a restaurant with a relaxed and cozy atmosphere, with a simple and elegant decoration that reflects the tradition and the culture of the place The restaurant is popular with both locals and visiting tourists, making it the ideal place to enjoy good food in an authentic Basque Country setting.
The trip includes a night in a charming hotel, the choice of the hotel is complemented by the logic of the dish, thus putting a brilliant final point to the dish.
